Fresh Tomato & Black Bean Salsa Recipe


Ingredients:

3-4 medium sized fresh tomatoes, stems removed, finely diced
1/2 red onion, finely diced
1 jalapeño pepper (stems, ribs, seeds removed), finely diced
Juice of one lime
1/2 cup chopped cilantro (approximate)
1/2 can of black beans (drained)
Salt and pepper to taste

I used my mini food chopper to dice all ingredients-except for the black beans. Then, I combined everything in a bowl and stirred in 1/2 can of drained black beans. I'm planning to use this salsa (instead of salad dressing) in the salads I'm packing for my husband's lunch for this week.
