Banana Bread Recipe

I LOVE to bake and wanted to be sure and share this recipe with everyone. I've been making a loaf every couple of days. I love giving the loaves away as gifts.

Ingredients:

3 or 4 ripe bananas, smashed

1/3 cup melted butter or margarine

1 cup sugar (can easily be reduced to 3/4 cup)

1 egg

1 teaspoon vanilla

1 teaspoon baking soda

pinch of salt

1 1/2 cups of all-purpose flour


Preheat the oven to 350. Mix melted butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg and vanilla. Sprinkle the baking soda and salt over the mixture and continue mixing. Add the flour and continue mixing. Pour mixture into a buttered 4/8 inch loaf pan. Bake for one hour or until done. Cool on a rack. Remove from pan and slice to serve.


The bread is very moist. You can also pour the batter into muffin cups to make muffins. Enjoy!
